Recipes!

Hi everyone!

I need your help today! After my recent hospital stays, I have truly valued the family and friends that have brought us dinners over the past few weeks. I never would have imagined that I would still be in pain 3 weeks post surgery, nor would I have imagined that my energy would still be as depleted as it is.

I've decided that I want to start making and freezing some meals for the days after bringing Ethan home. I have a few on my list, but I need your ideas too! What are some great dinners that you love that will freeze well?!

I like to freeze spaghetti sauce so all I have to do is boil the noodles and put garlic bread in the oven while the sauce is microwaving.

I'm doing the same thing. The meals on my list so far are:

1. Chili
2. Spaghetti and meatballs
3. Chicken Sausage and Kidney bean bake
4. Enchilada casserole
5. Stuffed peppers
6. Sheperd's pie
7. Chicken burgers/hamburgers
8. Chicken soup
9. Potato soup

I froze a TON of pot roast. The great thing about a roast are the many different ways it can be eaten! I put it in small seperate containers. One night we had plain roast, another I made roast sandwiches, and the rest was put into a pot of vegetable beef stew...just add V8 and an assortment of veggies! I also froze potato soup, and several different pies to help with the sweet cravings, and desert!!
